Garlic Grilled Pork Chops

Ingredients
  

  • 4 pork chops* 1½ inch thick
  • 2 tbsp olive oil
  • ½ tsp cloves ground, optional
  • 2 tsp garlic* fresh
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

  • In a small bowl stir together ½ tsp ground cloves (if you have these), 2 tsp crushed or minced garlic, 1 tsp salt, and 1 tsp pepper.
  • Rub both sides of chops with olive oil. Sprinkle mixture on each side of the chops and rub it in. Let meat come to room temperature.
  • Heat an outdoor grill to high heat, about 500 degrees. Sear each side over high heat for approximately 2 minutes, then move chops to an upper rack or indirect heat to finish cooking.
  • Close the lid and cook on medium, for approx.15 minutes more (time may vary depending on heat and thickness of chop).
  • Pork needs to be cooked to an internal temperature of 145 degrees.
  • Remove from heat, cover loosely with aluminum foil and allow chops to rest for 5 minutes.
