Ingredients
  

Instructions
 

  • Rough chop all of your vegetables
  • Place pan over medium heat and drizzle with olive oil
  • Add garlic to sauté for just a couple stirs, then add in the rest of the vegetables
  • Turn heat to medium-high. Cover and cook for 20 minutes.
  • Taste, adding salt and pepper to taste.
  • Serve as-is or on rice, pasta, chicken, or beef. Enjoy!
