Asparagus topped Ricotta Toast

Ingredients
  

  • ½ lb asparagus*
  • ½ lemon zested and juiced
  • 2 tbsp olive oil
  • salt + pepper to taste
  • 4 slices bread* of choice. Seedy grain bread, your favorite sourdough, or an everyday loaf
  • ¾ cup ricotta cheese

Instructions
 

  • Using a vegetable peeler slice the asparagus into thin ribbons by holding the stalk and sliding across evenly on a cutting board.
  • In a medium bowl toss asparagus ribbons with lemon zest, juice, olive oil, and salt and pepper. Let salad sit while preparing toast.
  • Toast bread in toaster or in a skillet with butter.
  • Spread each slice of toasted bread with ricotta cheese. Top each piece with asparagus salad and additional salt and pepper as needed.
