Ingredients

½ lb asparagus*
½ lemon zested and juiced
2 tbsp olive oil
salt + pepper to taste
4 slices bread* of choice. Seedy grain bread, your favorite sourdough, or an everyday loaf
¾ cup ricotta cheese

Instructions

Using a vegetable peeler slice the asparagus into thin ribbons by holding the stalk and sliding across evenly on a cutting board.
In a medium bowl toss asparagus ribbons with lemon zest, juice, olive oil, and salt and pepper. Let salad sit while preparing toast.
Toast bread in toaster or in a skillet with butter.
Spread each slice of toasted bread with ricotta cheese. Top each piece with asparagus salad and additional salt and pepper as needed.
