Tomato Basil Ricotta Toast

Ricotta toast is a quick snack or filling meal that can be whipped up in minutes using fresh ingredients. Enjoy this one hot by warming the tomato confit, or cold by using it straight from the fridge. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Ingredients
  

  • 4 slices bread* of choice, grainy seed bread, your favorite sourdough, or an everyday loaf
  • ¾ cup ricotta cheese
  • 1 cup tomato confit
  • 1 tbsp basil* can substitute fresh herbs of choice
  • salt + pepper to taste

Instructions
 

  • Toast bread slices in toaster or with butter in a skillet.
  • Thinly slice basil, or chop whatever herbs you are using into small pieces.
  • Spread ricotta cheese over toasted bread slices. Top with confit tomatoes and a drizzle of the oil. Sprinkle basil over tomatoes and season with fresh cracked pepper and salt.
