Sweet Potato Puff

This is a delicious and adaptable recipe that is great with sweet potatoes but you could also try it with winter squash (butternut, kabocha, acorn etc.).

  • 1 food processor or mixer
  • 1 Casserole Dish
  • 1 Mixing Bowl

Ingredients
  

Sweet Potato Mixture

  • 3 cups sweet potatoes* (peeled and cooked)
  • 4 eggs* (whites)
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 2 Tbsp flour

Topping

  • 3 Tbsp flour
  • 1/2 cup brown sugar
  • 2 Tbsp butter

Instructions
 

  • Preheat oven to 350 degrees F. Apply cooking spray to 1 1/2 quart casserole dish.
  • Using a food processor or mixer, smooth together all sweet potato mixture ingredients and pour into dish.
  • To make topping, crumble flour, brown sugar, and butter in small bowl. Sprinkle topping over sweet potato mixture.
  • Bake for 30 minutes util golden brown.
