Ingredients
  

  • 2 lbs sweet potato* cut into ¼ inch sticks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt + pepper to taste

Garlic Aioli

  • 1 cup mayonnaise
  • 1 tsp smoked paprika
  • 1 clove garlic* minced, more to taste
  • pepper fresh-cracked, to taste
  • 1 tbsp lemon juice freshly squeezed

Instructions
 

  • Preheat oven to 400° F.
  • If making the aioli: Combine all ingredients in a small bowl and stir well. Taste and adjust seasonings. Chill until ready to use.
  • Line baking sheets with parchment paper. In a large bowl toss the sweet potato sticks with olive oil and seasonings.
  • Spread the potatoes onto 1 large (or two small) rimmed baking sheets. Bake for 15 minutes, flip, and continue to cook until crispy, about 10 more minutes.
