Kernza® Cake with Seasonal Fruit
We aren’t saying this is the perfect dessert, but you might after trying it! This recipe uses 1 bowl (plus a baking pan) and can be made with any seasonal fruit you have on hand. Try it with berries, diced apples, or pears for a delicious treat you’ll want to make all year long. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Ingredients
- 6 tbsp butter Melted and slightly cooled
- 2 eggs*
- 3/4 cup sugar
- 1 tsp almond extract vanilla or lemon can be used instead
- 1/2 cup all-purpose flour*
- 1/2 cup kernza® or other perennial grain flour
- 1 cup berries* or fruit of choice
Instructions
- Preheat oven to 400 degrees and prepare an 8 inch cake pan by greasing lightly and dusting with flour. *See Notes
- Using a whisk or hand mixer, mix together the eggs, sugar, and extract until frothy. (All the rise in this cake comes from the air mixed into the eggs, so don’t skip this step! The mixture should turn a lighter yellow and have bubbles around the edges. If you think you’ve done enough give it a few more stirs.)
- Add melted butter, flour and Kernza® to bowl. Stir gently to incorporate flour but not lose the air you beat into the eggs.
- Pour mixture into prepared pan and sprinkle fruit on top. The weight of the fruit will cause it to sink a bit into the cake as it bakes.
- Bake for 20-30 minutes until top is golden brown and toothpick inserted into the middle comes out clean.
- Allow to cool for 20 minutes to 1 hour before serving. Serve with a sprinkle of cinnamon sugar on top, and a dollop of whipped cream (both are optional)You can store cake in the fridge or on the counter for up to 3 days.
Notes
*An 8-9 inch square pan or deep dish pie pan can be used instead of a cake pan.
