Hot Honey Sandwiches

Ingredients
  

  • 1 cup honey*
  • cup apple cider vinegar
  • 1 tsp red pepper flakes
  • 1 tsp cayenne pepper optional for extra spice
  • 1 tsp salt
  • 2 tbsp butter
  • 8 oz cooked chicken* diced or shredded
  • 4 buns

Instructions
 

Hot Honey Sauce

  • In a small saucepan combine honey, apple cider vinegar, pepper flakes, and salt. Heat gently, stirring often over medium-low heat. The mixture should bubble lightly but not boil. Allow to simmer for 20 minutes.
  • Remove honey from heat and taste. Add cayenne pepper to taste if you want it spicier. Add 2 tablespoons of butter and stir until melted.
  • The sauce can be made ahead and stored at room temperature for up to 2 weeks until ready to use.

Sandwich Assembly

  • Toss cooked chicken with half of the hot honey sauce. Spread in an even layer on a foil lined baking sheet.
  • Heat chicken mixture under broiler for 2-3 minutes until the edges start to get crispy. Remove pan from oven and flip and stir chicken to expose different areas. Return to broiler for 2-3 more minutes until chicken is crispy, but not burned.
  • Toast buns under broiler or in a buttered skillet until golden. Place chicken on buns with additional sauce as needed. Add your favorite toppings and enjoy.
  • Optional toppings: Pickles, pickled onions, lettuce, tomato, bacon, cheese slices.
