This is not your standard chicken sandwich! Local honey elevates leftover chicken or turkey to new levels of deliciousness. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
In a small saucepan combine honey, apple cider vinegar, pepper flakes, and salt. Heat gently, stirring often over medium-low heat. The mixture should bubble lightly but not boil. Allow to simmer for 20 minutes.
Remove honey from heat and taste. Add cayenne pepper to taste if you want it spicier. Add 2 tablespoons of butter and stir until melted.
The sauce can be made ahead and stored at room temperature for up to 2 weeks until ready to use.
Sandwich Assembly
Toss cooked chicken with half of the hot honey sauce. Spread in an even layer on a foil lined baking sheet.
Heat chicken mixture under broiler for 2-3 minutes until the edges start to get crispy. Remove pan from oven and flip and stir chicken to expose different areas. Return to broiler for 2-3 more minutes until chicken is crispy, but not burned.
Toast buns under broiler or in a buttered skillet until golden. Place chicken on buns with additional sauce as needed. Add your favorite toppings and enjoy.
