Honey Garlic Marinated Vegetable Kabobs

Ingredients
  

Kabobs

Marinade

  • cup olive oil
  • ¼ cup lemon juice fresh
  • 3 tbsp dijon mustard
  • 2 tbsp honey*
  • 2 cloves garlic* minced
  • 1 tbsp parsley* chopped fine
  • 1 tbsp basil* chopped fine
  • 1 tsp oregano*
  • salt + pepper

Instructions
 

  • Soak wooden skewers in water for at least 30 minutes.
  • Wash and chop all vegetables into bite sized pieces.
  • Combine all marinade ingredients in to a covered container and shake until combined.
  • In a zip top bag add all the vegetables and the marinade. Shake the bag lightly until the vegetables are coated in the marinade. Allow the vegetables to marinate for at least 4 hours, turning occasionally.
  • Thread the veggies onto the skewers. Preheat the grill to medium and lightly spray with cooking spray. Place the skewers on the grill, grill for about 15 minutes or until done.
