Ingredients
  

  • 2 lbs red cabbage*
  • 2 cups zucchini* or apple*
  • 1 red onion*
  • 2 cloves garlic* minced
  • ¼ tsp nutmeg
  • ¼ tsp ground cinnamon
  • ¼ tsp cloves ground
  • ¼ cup honey* or brown sugar
  • 3 tbsp apple cider vinegar
  • 1 tbsp butter
  • ½ cup water
  • salt + pepper

Instructions
 

  • First wash your produce. Peel and seed the apples or zucchini then cut into cubes. Slice the onion and red cabbage.
  • In a Dutch Oven or heavy-bottomed pot melt the butter on medium-high heat. Sauté the diced onion, zucchini or apples, and garlic for 2-3 minutes.
  • Add the red cabbage and vinegar, stir until combined. Then add the remaining ingredients and stir.
  • Reduce the heat to medium, cover the pot, and simmer for 50-60 minutes, until the cabbage is soft but not mushy.
  • Adjust the ingredients to your liking and serve hot.
