Ingredients
  

  • 6 ears sweet corn* husks removed
  • ½ cup Mexican crema or sour cream
  • ½ cup mayonnaise
  • ½ cup cilantro* chopped
  • 1 clove garlic* minced
  • ¼ tsp chili powder or to taste
  • 2 tsp lime zest from 1 lime
  • 2 tbsp lime juice from 1 lime
  • ½ cup cotija cheese crumbled (sub feta or parmesan if necessary)
  • lime wedges, for serving

Instructions
 

  • Preheat the grill to 400℉
  • Whisk together the crema, mayonnaise, cilantro, garlic, chili powder, lime zest and juice. Set aside.
  • Grill the corn by setting the shucked ears directly on your grill's grates for about 3 minutes on each side until dark golden brown. When all sides are done, remove from grill.
  • Using a basting brush or a spoon, coat each ear into the prepared sauce. Sprinkle with cojita (or parm or feta) cheese and serve immediately!
