Equipment

  • Blender or Food Processor or Mortar and Pestle
  • Kitchen Knife

Ingredients
  

  • ½ cup garlic scapes*
  • 1 cup spinach* or arugula*
  • ¼ cup walnuts or pine nuts, toasted
  • ¼ cup parmesan cheese freshly grated
  • 2 tsp lemon juice
  • ¼ cup olive oil
  • salt + pepper to taste

Instructions
 

Mechanical Method

  • Place garlic scapes, greens, nuts, parmesan, and lemon juice in a food processor or blender. Blend until a rough paste is formed.
  • Slowly add the olive oil, pulsing until you reach your desired smoothness.
  • Season with salt and pepper to taste.
  • Serve! Spread on bread, pasta, fish, pizza, or crackers. Freeze for later use.

Handmade Method

  • Mince garlic scapes very finely and add to mortar and pestle. Repeat with greens. Crush and pound until a paste forms. Repeat with nuts, then cheese, then olive oil until you reach desired texture.
