Smashed Potatoes

Ingredients
  

  • 1 lb potato* small reds, purples, yellows, etc
  • 2 cloves garlic* minced
  • 2 tbsp olive oil

Instructions
 

  • Preheat oven to 450 and spray a baking sheet with nonstick spray or lightly oil.
  • Boil the potatoes. In a large pot, add potatoes and cover so that the water line sits about 1 inch above the potatoes. Boil for 15-20 minutes. Drain very well.
  • Bake the potatoes. Put the potatoes onto the prepared baking sheet. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece. Top with olive oil, garlic and herbs of choice. Place into oven and bake for 18-20 minutes, or until golden brown and crisp.
  • One final time, taste the potatoes and season with extra salt if needed.
  • Then serve warm, garnished with any extra toppings that you might like, and enjoy!

Notes

Toppings: chopped fresh chives* or green onions*, thyme, butter, freshly-cracked black pepper, salt, sour cream
