Delicata Squash Onion-y Rings

Delicata squash are an unsung fall hero. The skin is so thin that you don’t need to peel it and it’s filled with vitamins – making this a low-prep, easy, healthy side or snack. Ingredients
  

  • 1 delicata squash*
  • 1 tbsp olive oil more to coat, if necessary
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tbsp onion powder more to taste

Instructions
 

  • Preheat oven to 425. Rinse and dry squash. Chop ends and discard.
  • Slice the squash into 1/4 in circles. Use a spoon to remove seeds from each ring.
  • Toss rings with oil and seasonings, making sure to coat entirely.
  • Spread rings onto a baking sheet evenly, taking care not to overlap. Sprinkle more salt if desired.
  • Bake for 20 minutes. Flip and roast until golden brown, up to an additional 15 minutes. Enjoy!
