Ingredients

1/2 lb bacon* chopped
1 onion* thinly sliced
1 tbsp butter optional
1 head cabbage* cored and sliced
2 tbsp caraway seeds
3 tbsp coarse mustard
12 oz local beer*
2 tbsp honey* or sugar
salt + pepper to taste

Instructions

In a large saucepan, cook the bacon over low heat. Add the onions and sweat for 2 minutes. Add remaining ingredients and season.
Cook until cabbage is tender, about 30 minutes.

Notes

Serving suggestions: serve this hot or cold, as a side for chicken or pork.
