Stir together the flour, sugar, and baking powder. Add in the eggs, milk (of choice), salt, and cayenne and combine to create a batter. Add the corn and chives and stir.
Heat canola oil to 365°. When the oil is heated, drop a 1-2 tablespoon scoops into the oil and cook for about 2 minutes. Flip and continue until desired color.
Transfer each fritter to a paper towel to soak up oil. Serve as-is or with sour cream, maple syrup, or dusted with powdered sugar!
