herbs*thyme, tarragon, rosemary, parsley, etc. (any combination...optional)
Instructions
Place the bones, roughly chopped veggies, herbs and salt in a large pot. Bring to a boil. Reduce heat and simmer for 6-10 hours.
You can also use an Instant Pot, or other pressure cooker. Place all ingredients into the pot, seal lid and press the “soup/broth” button for 60-90 minutes and then slow cook for an additional 4-6 hours (or overnight).
Strain broth, cool and then chill in refrigerator overnight. Skim off excess fat.
Use in your favorite soup or stew or freeze for later.
